I started buying and eating more vegan products when we moved to The Netherlands. The reason was because we were newcomers and had no idea where to find Halal butchered meat and chicken. We used to buy our groceries from Lidl and Albert Heijn.
At Albert Heijn, they had actually a small Halal section for fresh meat and chicken that I discovered later on. But the products where very limited and they were always running out of meat. So I used to go to the vegan section instead.
My husband was not very positive to the idea of plant based meat. However, I wanted to try it. I cooked once a meal with plant based meat without telling him what it was. He enjoyed the food and told me how delicious it was. He still doesn’t know until today that it was vegan meat. Hehe 😜 If you read this darling, I’m so sorry but now you know 😁 and it wasn’t that bad, right?
Anyway, a couple of days ago I found this spaghetti made out of lentils and thought, I need to try it! I also found plant based chicken and decided to cook a vegan meal. (Ok to be honest, I forgot to take out the chicken from the freezer that day which led me to the vegan section at Lidl this time 😆)
Here comes the recipe for a delicious vegan meal that I came up with the other day!
Rafif’s delicious vegan recipe with spaghetti lentils
What you need:
- A pack of spaghetti lentils (or any other spaghetti/pasta)
- A pack of plant based chicken (200g)
- Garlic (2 or 3 cloves of garlic)
- An onion
- Bell peppers of choice (I used green, red and yellow)
- Cauliflower
- Broccoli
- Mushrooms
- Coconut milk (250ml)
- Chopped tomatoes (390g)
- Cilantro
- Seasoning of choice (I used salt, pepper, red pepper, ginger and barbecue seasoning)
- Olive oil or rapeseed oil
How to steps:
Wash and chop all the vegetables and set aside.
Chop the garlic cloves and onion finely.
Add some olive oil or rapeseed oil in a pot. When heated, add the finely chopped garlics and onions and stir until golden brown.
Add the plant based chicken and stir every now and then until completely cooked. Then add your choice of seasoning and stir.
Now add all the vegetables and a little bit of water and cook for a couple of minutes under a lid.
Meanwhile, cook the spaghetti according to the instructions on the package.
When the vegetables are cooked well, add the entire coconut milk package and chopped tomatoes.
Cook for a couple more minutes until it starts boiling.
Finally, rinse the spaghetti and add it to the pot.
Chop some cilantro and sprinkle on top.
And have a nice meal!
I’m going to be super honest here and say that the spaghetti made out of lentils was… very interesting. I didn’t fancy it at all. The texture, the taste, the smell.. It’s literally like boiling lentils and the entire house will smell like lentils 😅
However, when added to the pot it was fine. But I don’t think that I’d buy it again. Not a big hit!
